Eggplant With Cheese

- 2 medium eggplants
- 1/2 c. butter
- 8 oz. thinly sliced Swiss cheese
- freshly ground pepper
Directions

1Preheat oven to 350°.

2Peel and slice eggplants about 1/4-inch thick rounds.

3Soak in salted water 20 minutes and drain.

4Cover with boiling water and drain immediately.

5Pat eggplants dry. Melt butter in a frying pan and saute eggplants 2 minutes on each side.

6Place one layer in a buttered baking dish; top with half of the cheese and sprinkle with pepper.

7Repeat the layers once more. Bake 30 minutes.

8Serves 4.
