- 1 can chickpeas
- 1 onion, minced
- 1 large can tomatoes or 1 can tomato paste, diluted with 1 can water
- 1 large eggplant, cubed (do not peel)
- 4 Tbsp. oil
- salt and allspice to taste
Directions

1Fry onion until lightly golden.

2Add eggplant and chickpeas, stirring lightly, until eggplant is tender.

3Add tomatoes or diluted tomato paste and seasoning, blending for a few minutes until done.

4Serve warm or cold.
