- 6 eggs
- 6 slices Canadian-style bacon (6 oz.)
- 4 egg yolks
- 2 Tbsp. lemon juice
- dash of white pepper
- 1/8 tsp. salt
- 1/2 c. butter or margarine
- 6 rusks, or 3 English muffins, split, toasted and buttered
Directions

1In 10-inch skillet, heat 1-inch of water to boiling.

2Break 1 egg into a small dish.

3Slide egg into water, tipping dish toward edge of pan.

4Repeat with remaining 5 eggs.

5Reduce heat, cover and simmer until eggs are just soft-cooked, about 3 minutes. Remove with slotted spoon; place in pan of warm water to keep warm.
