  • 1 (12 oz.) pkg. sausage
  • 1/4 lb. fresh mushrooms, sliced
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 6 eggs
  • 3 Tbsp. sour cream
  • 1/4 to 1/3 c. Mexican chili sauce
  • 8 oz. Velveeta cheese, sliced
  • 8 oz. medium Cheddar cheese, sliced
  • 8 oz. Mozzarella cheese, sliced

    Saute crumbled sausage, mushrooms, onions, salt and pepper. Drain well on paper towels. Combine eggs and sour cream in blender for 1 minute. Pour eggs in greased 7 1/2 x 11 1/2-inch baking dish. Bake at 400° for 8 to 10 minutes until set in middle. Spoon hot sauce over eggs and add sausage mixture. Layer the 3 cheeses, beginning with the Velveeta. Casserole may be refrigerated or frozen at this point and baked later. Bake, uncovered, at 300° for 45 minutes. Remove from the oven and let set for 5 to 10 minutes before cutting and serving. Serves 6 to 8.
