Ingredients
- 5 large eggs
- 2 cups mashed potatoes (preferably leftovers as they need to be chilled)
- 13 cup all-purpose flour
- 1 cup marinara sauce, warmed (or any tomato sauce)
- parmesan cheese
- salt and pepper
Directions

1Preheat oven to 200 degrees F.

2Stir 1 egg in a large bowl to blend.

3Mix in the potatoes and the flour.

4Using a generous 1/2 cup of potato mixture for each, form the potato mixture into pancakes (you should only get 4).

5Heat the oil in a large nonstick pan.

6Fry the pancakes until they are golden brown, about 2 min per side.

7Place on paper towels to drain.

8Keep pancakes in oven to keep warm.

9Pour oil off pan.

10Heat the pan.

11Cook eggs to taste, either with yolks runny or hard.

12Season with salt and pepper.

13Spoon sauce onto 4 plates (or double up on 2).

14Place a pancake atop the sauce.

15Top each pancake with a fried egg.

16Sprinkle with cheese and serve.
