  • 1 lb. ground beef
  • 1/2 to 1 envelope chili mix
  • 2 c. stewed tomatoes
  • 1 (1 c.) pkg. yellow rice
  • 1 (10 oz.) can cheddar cheese soup
  • 1/3 c. milk
  • 2 c. crushed corn chips
  • 1 c. shredded cheddar cheese

Directions

    Brown ground beef in skillet, stirring until crumbly; drain. Add chili mix, tomatoes and a small amount of water; mix well. Simmer until reduced to desired consistency.

    Prepare rice using package directions.

    Heat soup and milk in saucepan until well blended, stirring frequently.

    Layer ground beef mixture, rice and soup mixture in baking dish.

    Add layers of corn chips and cheese. Garnish with chopped, onion, chopped olives, shredded lettuce and/or tomato wedges.
