- 10 (10-inch) flour tortillas
- 9 to 12 eggs
- 3/4 to 1 c. milk
- 12 to 14 oz. Monterey Jack cheese, shredded
- 2 to 3 oz. sharp cheese, shredded
- 12 oz. jar salsa (your choice, hot or mild)
- 3/4 lb. ground meat, ham or sausage, cooked and drained (optional)
Directions

1Overlap the bottom of a greased 13 x 9-inch pan with tortillas. Beat eggs with milk, then add cheese and salsa.

2Mix together.

3Add meat, if desired.

4Bake at 350° for good hour.

5It's done when an inserted knife comes out clean.
