  • 10 (10-inch) flour tortillas
  • 9 to 12 eggs
  • 3/4 to 1 c. milk
  • 12 to 14 oz. Monterey Jack cheese, shredded
  • 2 to 3 oz. sharp cheese, shredded
  • 12 oz. jar salsa (your choice, hot or mild)
  • 3/4 lb. ground meat, ham or sausage, cooked and drained (optional)

Directions

    Overlap the bottom of a greased 13 x 9-inch pan with tortillas. Beat eggs with milk, then add cheese and salsa.

    Mix together.

    Add meat, if desired.

    Bake at 350° for good hour.

    It's done when an inserted knife comes out clean.
