Electric Lemonade

   Pick two lemons that you will peel zest from.

   Scrub them well under running water to remove pesticides and any particulate matter.

   Using a vegetable peeler, peel wide strips of 1.5 lemons and set aside.

   In a small saucepan, heat the sugar and water over medium until the sugar is dissolved.

   Stir in the lemon peel and let come to a low boil.

   Reduce heat and simmer uncovered for about 5 minutes.

   Let cool.

   Strain out the lemon peel and transfer to a pitcher.

   Stir in the lemon juice and chill in the refrigerator.

    Stir in club soda and serve over ice.
