- 6 chicken breast halves
- flour for dredging
- 6 slices Prosciutto
- 6 slices (8 oz.) Mozzarella
- 1/4 c. butter
- 1 c. chicken broth
- 1 c. Marsala wine
- 1/3 c. butter
- 2 Tbsp. olive oil
- 1/2 lb. mushrooms
- 1/3 c. minced parsley
Directions

1Pound chicken breasts and dredge in flour.

2Put a slice of Prosciutto and a slice of Mozzarella on each piece of chicken. Roll up and secure with a toothpick.

3Melt 1/4 cup butter in large skillet.

4Add chicken and saute to brown.

5Add chicken broth and wine; cover and simmer about 30 minutes, until chicken is cooked through.

6In another skillet, saute mushrooms in 1/3 cup butter and 2 tablespoons oil until crisp.

7Stir in parsley, add to chicken about 5 minutes before chicken is done.
