- 14 lb butter
- 1 teaspoon baking powder
- 2 egg yolks
- 1 12 cups flour
- 12 cup sugar
- 1 tablespoon cocoa
- raspberry jam
- 2 egg whites
- 1 cup sugar
- 1 cup coconut
- 1 tablespoon cocoa
Directions

1Cream the butter and sugar and then add the egg yolks.

2Sift the dry ingredients together, and then mix well into the creamed mixture.

3Press into a greased sponge roll tin.

4Spread this mixture with a layer of raspberry jam.

5Beat the egg whites until very stiff.

6Add the sugar, coconut and cocoa.

7Spread the topping mixture over the jam.

8Bake in an oven preheated to 350 deg F/180 C.

9Cut while warm.
