  • 1 mango, pureed
  • 2 limes, rind and pith removed
  • 2 spring onions
  • 6 to 8 cherry tomatoes, halves
  • 1 dash dried mint
  • 1 dash dried red chillies

Directions

    Segment your lime and break up carefully into small chunks.

    Finely chop the spring onions, using mostly the green parts.

    Place lime chunks, spring onions and cherry tomatoes in a bowl and add the pureed mango.

    Add the mint and chillies and stir.

    Leave in the fridge for 1/2 hour to allow the flavors to develop, then serve with cold cuts and peppery salad leaves.
