Ingredients

  • 8 ears Corn
  • 1/4 cups Olive Oil
  • 1/2 cups Mayonnaise
  • 1/2 cups Queso Fresco Cheese
  • 2 Tablespoons Chopped Cilantro
  • 1 Tablespoon Lime Juice
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1/2 teaspoons Chili Powder
  • 1/4 cups Melted Butter

Directions

    Pull husks back of corn and tie with a rubber band. Brush corn with olive oil and grill until tender.

    While corn is cooking, mix the mayo, queso fresco, cilantro, lime juice and salt and pepper and chili powder. It should be kind of a chunky mixture. Add or subtract as much as you want. It is totally up to your taste.

    When corn in done, brush with butter and then brush on the cheese mixture. (I glob it on!)
