- 1 large can whole Ortega peppers
- 1/2 doz. eggs, separated
- 2 tsp. flour
- 1 c. oil
- 1 1/2 to 2 lb. Jack cheese
Directions

1Cut cheese in 1-inch strips.

2Clean peppers in running water, be careful not to break peppers.

3Put peppers on paper towels and pat dry.

4Put strips of cheese inside peppers and set aside.

5Beat egg whites until fluffy and stiff; add yolks, keep beating.

6Add flour and mix well.

7Have frying pan ready with oil on medium heat.

8Dip peppers in egg mixture until covered.

9Fry until golden brown on all sides.

10Drain on paper towels.

11Serves 6.
