- 12 large tortillas
- 2 lb ground beef
- 4 1/2 tbsp chili power
- 1 large onion (I like the purple for this)
- 2 tbsp minced garlic
- 1 can ro-tel
- 1 large can of Wolf brand chili, or left over home made
- 1 salt/pepper to taste
- 1 bell pepper
- 1 packages 3 cheese Mexican blend
Directions

1In a skillet brown beef.

2Half way through cooking add diced onions, bell pepper, seasonings, garlic, and ro-tel.

3Once fully cooked spoon meat mixture into tortillas, roll them up enchilada style and lay out in casserole dish.

4Once all are laid out cover them with chili, and cook for 15 minutes in the oven at 350F.

5Add cheese to top and cook another 5 minutes.

6I call these encherito's because it's not quite a burrito, and not quite an enchilada.
