- 1 c. chopped onion
- 1/2 c. plus 2 Tbsp. vegetable oil, divided
- 2 lb. ground beef
- 1 (14 1/2 oz.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 2 (1 1/2 oz.) pkg. enchilada sauce mix
- 1/2 c. water
- 2 (15 oz.) cans pinto beans (undrained)
- 12 tortillas
- 1 c. shredded Cheddar cheese
- 1 medium tomato, chopped
- 1 c. shredded lettuce
Directions

1Saute onion and green pepper in 2 tablespoons of oil until soft.

2Add 2 tablespoons of oil and ground beef.

3Cook slowly until lightly browned, using Dutch oven.

4Stir in tomatoes, tomato sauce, enchilada sauce mix, water and beans.

5Simmer, uncovered, for 10 minutes.
