  • 1 c. chopped onion
  • 1/2 c. plus 2 Tbsp. vegetable oil, divided
  • 2 lb. ground beef
  • 1 (14 1/2 oz.) can tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 (1 1/2 oz.) pkg. enchilada sauce mix
  • 1/2 c. water
  • 2 (15 oz.) cans pinto beans (undrained)
  • 12 tortillas
  • 1 c. shredded Cheddar cheese
  • 1 medium tomato, chopped
  • 1 c. shredded lettuce

Directions

    Saute onion and green pepper in 2 tablespoons of oil until soft.

    Add 2 tablespoons of oil and ground beef.

    Cook slowly until lightly browned, using Dutch oven.

    Stir in tomatoes, tomato sauce, enchilada sauce mix, water and beans.

    Simmer, uncovered, for 10 minutes.
