  • 1 pkg. 6-inch flour tortillas
  • 1 lb. ground meat
  • 1 onion, chopped
  • 1 can RoTel
  • 1 lb. grated Monterey Jack cheese
  • 1 can enchilada sauce
  • 1 small can chopped jalapeno
  • 8 oz. sour cream

Directions

    Brown meat with onion and drain.

    Add RoTel, enchilada sauce and jalapenos.

    Simmer for 15 minutes over medium heat.

    Spray 9-inch x 13-inch casserole dish with no stick cooking spray. Layer tortillas, meat mixture, and cheese.

    Will make two layers. Bake at 350° until cheese bubbles.

    Serve with sour cream.
