- 1 1/2 lb. ground beef, browned and drained
- 2 packs uncooked corn tortillas
- 3 c. grated Cheddar cheese
- 2 packs taco seasoning
- 4 c. tomato juice or V-8 juice
Directions

1Mix taco seasoning into browned ground beef.

2Set aside.

3In a greased deep casserole dish, lay tortillas in bottom, overlapping to cover entire bottom of dish.

4Spread 1/2 of meat mixture over tortillas evenly and sprinkle 1/2 of cheese evenly.

5Continue with another layer of tortillas; then meat and then cheese.

6Pour tomato juice over entire surface, then bake in a 350° oven until heated and cheese is melted (about 30 to 40 minutes).

7Serve on bed of lettuce and top with sour cream and diced tomatoes and onions.

8Serves 6 to 8 people.
