- 1 1/2 lb. lean ground beef
- 1 small chopped onion
- 1 Tbsp. minced garlic
- 1 1/2 c. picante sauce
- 1 (10 oz.) pkg. frozen spinach
- 1 (8 oz.) can tomato sauce
- 2 medium tomatoes, chopped
- 1 large diced red bell pepper
- 1 Tbsp. lime juice
- 1 1/2 tsp. salt
- 12 corn tortillas
- 1 large carton sour cream
- 3/4 c. Monterey Jack cheese
- 3/4 c. Cheddar cheese
Directions

1Brown meat with onion and garlic; drain.

2Add picante sauce, spinach, tomato sauce, tomatoes, pepper, lime juice and salt. Simmer uncovered 15 minutes.

3Arrange 6 tortillas on bottom and up sides of greased 13 x 9-inch dish.

4Top with 1/2 of meat mixture. Layer remaining tortillas, overlapping if necessary.

5Spread sour cream over tortillas.

6Top with remaining meat mixture.

7Bake at 350° for 30 minutes until hot and bubbly.

8Remove from oven and sprinkle with shredded cheeses.
