- 2 lb. ground beef
- 1 large onion
- 12 flour tortillas
- 1 large can enchilada sauce
- 1 small can tomato sauce
- 1 can corn, drained
- 1 small can diced olives
- 1 small can diced chilies
- 1/4 tsp. salt
- 1 pinch oregano
- 1 to 2 c. grated Cheddar cheese
- 1 small sour cream
Directions

1Brown meat and onion.

2Mix enchilada sauce with tomato sauce. Add 1/2 of sauce mixture to meat mixture.

3Add corn, olives, salt and oregano.

4Line casserole dish with 6 tortillas.

5Add meat mixture.

6Spread sour cream mixed with diced chilies.

7Spread with 1/2 grated cheese.

8Top with remaining 6 tortillas, grated cheese and enchilada sauce mixture.

9Bake 25 minutes at 350° or 400°.
