  • 1 1/2 lb. lean ground meat
  • 1 onion
  • 1 pkg. enchilada mix
  • 1 can tomato soup
  • 1 can golden mushroom soup
  • 1 can Cheddar cheese soup
  • 1 can Ro-Tel tomatoes, chopped
  • 15 tortillas (corn), cut in fourths

Directions

    Brown ground meat and onion; add enchilada mix, tomato soup, mushroom soup, Cheddar cheese soup and Ro-Tel tomatoes.

    Cook for about 10 minutes, then pour in casserole dish, alternating meat with tortillas.

    Top with grated cheese (1 1/2 cups).

    Bake at 350° for 35 minutes; can be frozen before you cook.
