- 2 large onions
- 1 red bell pepper
- 1 green bell pepper
- 1 clove garlic, minced
- 28 oz. chopped tomatoes
- 2 lb. ground beef
- salt and pepper
- 1 Tbsp. red wine vinegar
- 2 tsp. cumin
- 1 tsp. oregano
- 6 flour tortillas
- 3 oz. Cheddar cheese
- 3 oz. Monterey Jack cheese
Directions

1Heat oven to 350°.

2Slice onion and peppers.

3Add garlic. Drain tomatoes; cook beef in a large skillet until brown.

4Remove with slotted spoon.

5Add onion and peppers; cook until soft, about 15 minutes.

6Remove with slotted spoon and return meat to pan. Add tomatoes, vinegar, cumin, oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper.
