- 3 tbsp vegetable oil
- 1 tbsp all purpose flour
- 1/4 cup chili powder
- 2 cups chicken stock
- 10 oz tomato paste
- 1 tsp dried oregano
- 1 tsp cumin
- Salt & pepper to taste
Directions

1Combine chicken stock, tomato paste, oregano, cumin, salt, and pepper in a bowl. Set aside.

2Heat oil in a medium sauce pan over medium heat.

3Using a wooden spoon, stir in flour, stirring continuously 1 minute.

4Stir in chili powder, stirring continuously for 30 seconds.

5Stir in chicken stock mixture and heat to a boil, stirring occasionally.

6Reduce heat to simmer, allowing to cook for 15 minutes (recommend covering).

7Taste and adjust seasoning as needed.
