- ground meat, prepared as for tacos
- grated cheese
- corn tortillas
- 4 cans enchilada sauce
- oil
Directions

1In a skillet, heat oil until warm.

2Place a tortilla in oil until soft (do not fry them until they are crispy).

3Shake off excess oil.

4Lay tortillas flat.

5Put a tablespoon of meat and some grated cheese along the edge of the tortilla.

6Roll up filling in tortilla.

7Place in baking pan.

8Repeat procedure until pan is full.

9If any meat and cheese are left, sprinkle along top of enchiladas.

10Pour enchilada sauce over enchiladas until covered.

11Bake at 350° until bubbly.
