Ingredients

  • 1 large onion
  • 1 large pepper
  • 1 c. chopped mushrooms
  • 3 cans of cream of mushroom soup
  • 2 c. Picante sauce
  • 1 dry pkg. enchilada mix
  • shredded Monterey Jack and Cheddar cheese (1 lb. each or as much as you like)
  • 1 cooked chicken, chopped (or turkey)

Directions

    Saute over low heat onion, pepper and mushrooms.

    Add soups, Picante sauce and enchilada mix.

    Prepare your cooked chicken or turkey.

    Use large or medium flour tortillas.

    Spread a little of your sauce on tortilla; add some chopped up chicken or turkey and sprinkle with shredded cheese.

    Roll up.

    Lay into pan that has been sprayed with Pam or slightly greased.

    Pour enchilada sauce over all.
