- 1 large onion
- 1 large pepper
- 1 c. chopped mushrooms
- 3 cans of cream of mushroom soup
- 2 c. Picante sauce
- 1 dry pkg. enchilada mix
- shredded Monterey Jack and Cheddar cheese (1 lb. each or as much as you like)
- 1 cooked chicken, chopped (or turkey)
Directions

1Saute over low heat onion, pepper and mushrooms.

2Add soups, Picante sauce and enchilada mix.

3Prepare your cooked chicken or turkey.

4Use large or medium flour tortillas.

5Spread a little of your sauce on tortilla; add some chopped up chicken or turkey and sprinkle with shredded cheese.

6Roll up.

7Lay into pan that has been sprayed with Pam or slightly greased.

8Pour enchilada sauce over all.
