  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 small can chopped ripe olives (black olives)
  • 1 small can chopped green chiles
  • 1/2 lb. grated Monterey Jack cheese
  • 1/2 lb. grated Cheddar cheese
  • 1 can enchilada sauce (mild)
  • 1 small can tomato sauce
  • 1 doz. corn tortillas

Directions

    Brown ground beef and onion; drain.

    Add olives and chilies and heat.

    Add 1/2 of each cheese.

    Mix enchilada sauce and tomato sauce together.

    Dip tortilla in hot oil for a few seconds.

    Place one spoonful of mixture and 1 spoonful sauce in middle of tortilla.

    Roll up.

    Pour remaining sauce and cheeses over top. Heat at 250° until cheese is bubbly and meat is hot.
