- 1 lb. ground beef
- 1 medium onion, chopped
- 1 small can chopped ripe olives (black olives)
- 1 small can chopped green chiles
- 1/2 lb. grated Monterey Jack cheese
- 1/2 lb. grated Cheddar cheese
- 1 can enchilada sauce (mild)
- 1 small can tomato sauce
- 1 doz. corn tortillas
Directions

1Brown ground beef and onion; drain.

2Add olives and chilies and heat.

3Add 1/2 of each cheese.

4Mix enchilada sauce and tomato sauce together.

5Dip tortilla in hot oil for a few seconds.

6Place one spoonful of mixture and 1 spoonful sauce in middle of tortilla.

7Roll up.

8Pour remaining sauce and cheeses over top. Heat at 250° until cheese is bubbly and meat is hot.
