- 2 pkg. enchilada mix
- 2 cans tomato sauce (8 oz.)
- 3 lb. ground beef
- 1 medium onion, diced
- 1 can black olives
- 15 large flour tortillas
- 4 c. Cheddar cheese, grated
Directions

1Brown ground beef in skillet.

2Prepare enchilada sauce mix according to directions on package.

3Drain ground beef and mix 1/2 of sauce mix.

4Place meat, about 3 tablespoons, on each tortilla. Sprinkle cheese over meat.

5Add about 1 teaspoon of chopped onion on each, roll and place in large casserole pan.

6Continue until you run out of meat mixture.

7Using ladle, pour remaining sauce mix over enchiladas.

8Cover well; sprinkle remaining cheese over the top.

9Place in a 350° oven until cheese is melted.
