- 1 pkg. endive
- 1 onion, diced
- 1/4 lb. bacon
- 3 eggs
- 1/3 c. sugar
- 1/3 c. vinegar
- 2 c. water
- salt and pepper to taste
- 1/4 c. cornstarch
- 1/4 c. water
Directions

1Cut and clean endive; cut in bite-size pieces.

2Put in bowl with diced onion.

3Cut bacon in small pieces and fry until crisp. Drain on paper towels.

4Blend together sugar, vinegar, 2 cups water, salt and pepper in saucepan. Bring to a boil.

5Once boiling, add cornstarch mixed with 1/4 cup water; stir until thickened.

6Makes a nice, creamy dressing.

7Pour dressing over endive.
