- 6 oz pitted dried dates, chopped
- 7 oz raw almonds, toasted
- 3.5 oz Brazil nuts, toasted
- 5 1/2 tbsp cocoa powder
- 1/2 cup desiccated coconut, toasted
Directions

1In a saucepan, bring dates and 3/4 cup water to a simmer. Cover and simmer for 10 mins, or until dates are soft and liquid has evaporated. Let cool in pan for 10 mins.

2Process nuts in a food processor until finely ground. Add date mixture, cocoa powder and 1/4 cup coconut. Process until combined. Roll into balls, each using around 1 tbsp mixture. Roll balls in remaining coconut to coat. Transfer to a baking tray lined with parchment paper and chill for 30 mins. Serve.
