English Pear Pie

  • 3 English muffins
  • 29 oz. can pears
  • 2 Tbsp. lemon juice
  • 4 large eggs
  • 1/3 c. sugar
  • 1 1/2 c. milk
  • 1 c. brown sugar
  • 1/2 c. whipping cream
  • 2 tsp. vanilla
  • Cool Whip
  • 3 oz. margarine

Directions

    Crumble English muffins and set aside.

    Drain and chop pears into small pieces and place in 9-inch or 10-inch pie plate sprayed with Pam.

    In processor or blender, mix lemon juice, eggs and sugar.

    Add milk and mix, then add English muffin crumbs.

    Pour over pears.

    Bake at 350° for 55 minutes to 1 hour.

    Cool and place on plate.

    In pan, melt margarine and add brown sugar and cream. Bring to boil 4 to 5 minutes.

    Turn fire off and add vanilla.

    To serve, spread Cool Whip on top and pour sauce over.
