English Rice Pudding

  • 4 Tbsp. polished or short grain rice (not instant)
  • 1 1/4 c. (20 fluid oz.) milk 1%, 2% or whole
  • 4 Tbsp. sugar or to taste
  • nutmeg to taste
  • 1/4 to 1/2 c. raisins (optional)

Directions

    Cover rice with boiling water and let stand overnight.

    Step 1: Heat oven to 325°.

    Drain rice, cover with fresh boiling water. Bake until water is almost absorbed, 10 to 15 minutes.* Step 2: Turn oven down to 300°; add sugar, nutmeg and some of the milk. Stir until the sugar is dissolved.

    Add remaining milk and raisins (if used); return to oven for approximately 2 hours.
