- 1 qt. chicken or 4 to 5 lb. chicken
- 1 heaping c. fine bread crumbs
- 3 c. broth
- 1/2 tsp. baking powder
- 3 eggs, beaten
- 1 c. cooked rice
Directions

1Cook chicken until done; cool and take off bone, cut into pieces.

2Put broth over crumbs; beat eggs and add to crumbs.

3Add baking powder and rice.

4Fold in chicken last.

5Salt and pepper to taste.

6Bake 45 minutes to 1 hour at 350°.

7Easily serves 12 to 15.
