- 2 heads escarole
- 1 medium can black pitted olives, drained
- 1 medium can mushrooms, drained
- 4 cloves chopped garlic
- 1/4 c. olive oil
- salt
Directions

1Wash escarole very good; cut up and add salt.

2Boil until tender; drain and set aside.

3In a saucepan, brown garlic in olive oil.

4Don't burn it.

5Add mushrooms and black olives.

6Cook a few minutes.

7Add escarole; cook about 5 minutes longer.

8Add salt and pepper.

9Serve with white rice or meat.

10Makes about 6 servings.
