- 1 1/2 c. sifted flour
- 1 tsp. baking powder
- 1 tsp. salt
- 5 1/2 c. pecan halves
- 6 eggs
- 1/2 c. corn syrup
- 1 1/2 c. sugar
- 2 (8 oz.) pitted dates
- 1 (16 oz.) jar pineapple preserves
- 4 c. drained maraschino cherries
- 1/2 c. dark rum
Directions

1Grease large loaf pans.

2Line with foil and grease again. Sift flour, sugar, baking powder and salt in large mixing bowl, adding fruit and pecans.

3Mix well.

4Beat eggs and rum.

5Pour over mixture.

6Pour into loaf pans.

7Bake in 300° oven for 1 3/4 hours. Cool in loaf pan 15 minutes.

8Brush top with corn syrup while warm.
