- 4 c. sifted flour
- 2 c. sugar
- 2 tsp. cinnamon
- 1 tsp. allspice
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 sticks margarine, melted
- 2 eggs
- 2 c. applesauce
- 1 c. chopped pecans (optional)
Directions

1Preheat oven to 400°.

2Sift and measure flour. Combine all dry ingredients in a large mixing bowl. Melt margarine and combine applesauce and eggs.

3Mix well. Add liquid ingredients to dry ingredients using the well method.

4Stir all ingredients until completely moistened. Lumps are okay, overmixing will cause muffins to be tough and have tunnels.

5Fold in pecans (optional). Spray muffin tins with spray shortening.

6Fill muffin cups 3/4 full.

7Put water in empty muffin cups to equalize heat.

8Bake 15 to 18 minutes.

9Leftover batter will keep in an airtight container in the refrigerator up to 3 weeks.

10Yields 24 muffins.
