- 1/2 c. shortening
- 1 3/4 c. sifted all-purpose flour
- 1 c. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 3/4 c. milk
- 1 tsp. vanilla
Directions

1Place shortening in mixing bowl.

2Sift in dry ingredients. Add egg and half the milk.

3Mix until flour is moistened.

4Beat 2 minutes at low speed on electric mixer.

5Add remaining milk and vanilla.

6Beat 1 minute longer.

7Fill paper bake cups in muffin pans half full.

8Bake at 375° for 18 to 20 minutes or until done. Cool.

9Frost with jelly frosting.

10Makes 1 1/2 dozen cupcakes.
