- 1 cup of red lentils (masur dal) pr split pigeon peas (tuvar dal) or mung beans (mung dal)
- 1/2 tsp ground tumeric
- 1/2 tsp salt
- 1 onion quartered
- 4 cups of water
- 1-2 Tblsp ghee or butter
- 1/2 tsp cumin seeds
- 2-4 cloves of garlic
- 1-2 Tbsp finely chopped shallot
Directions

1Rinse dal and transfer to a pot, add tumeric, salt quartered onion and chile to water and bring to boil.

2When dal is soft and mushy pus through food mill or blender so the texture is thick smooth and pourable.

3Taste for salt.

4To finish heat ghee and then sizzle the seeds, garlic and onion until the garlic begins to brown and seeds start to crackle. (this is known as vaghar in gujarati or turka in Hindi).

5Tip the turka into the dal and stir.
