- 6 slices bacon, cut into 1-inch pieces
- 1 small onion, chopped
- 3/4 lb. chicken livers
- 3/4 lb. sweet Italian sausage, crumbled
- 1 Tbsp. brandy
- 1/4 c. heavy cream
- 1/4 tsp. nutmeg
- salt and pepper to taste
Directions

1In a small skillet, cook bacon until it begins to brown. Transfer to the bowl of a processor.

2Add onion to the bacon fat and cook until limp.

3Add onion to the bowl.

4Add chicken livers to the fat, cooking until no longer pink.

5Add them to the bowl. Cook sausage in the same pan until browned and add to the bowl. Add brandy, cream, nutmeg, salt and pepper.

6Process until smooth. Pour into a well buttered mold and refrigerate until firm. Unmold and serve with rounds of dark bread.
