  • 80 grams Cake flour
  • 1/2 tsp Baking powder
  • 40 grams Butter
  • 2 Eggs
  • 60 grams Sugar
  • 1 dash Vanilla extract

    Whisk the eggs.

    Add the sugar in three batches and whisk until the batter is thick.

    The batter should be thick like ribbons.

    Add the melted butter and vanilla extract.

    Whisk a little bit.

    Add the sifted flour and baking powder and fold in with a rubber spatula (until no longer floury).

    Pour into the cups about 60-70% full, and bake for 20 minutes in an oven preheated to 180C.

    It's delicious right out of the oven or the next day!
