Fabulous Peanut Brittle

Ingredients

  • 1 1/2 c. white sugar
  • 1 1/2 c. white syrup
  • 1 1/2 c. water
  • 1 1/2 Tbsp. oleo or butter
  • 1o to 12 oz. raw Spanish peanuts
  • 1 1/2 tsp. vanilla
  • 1 Tbsp. baking soda

Directions

    In a 1 1/2 to 2-quart heavy saucepan add white sugar, white syrup and water.

    Bring to a boil, stirring occasionally, until it reaches 235° on a candy thermometer.

    Add oleo or butter and peanuts.

    Continue boiling and stir constantly until it reaches 300° on thermometer.

    Remove from heat and add vanilla and soda. Stir well, but do not overbeat, it will foam up some and you want this texture.

    Pour onto two well-greased cookie sheets.

    Cool, crack and enjoy!!!
