Ingredients
- 2 lb. potatoes, peeled and cut into quarters
- 1 egg, beaten
- 2 to 4 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 Tbsp. chopped parsley, chives and lemon thyme, mixed (optional)
- whole milk
- salt and ground pepper
- black pepper
- seasoned flour (flour seasoned with salt and pepper)
- bacon fat or butter (for frying)
Directions

1Boil potatoes until tender, 15 minutes.

2Drain well.

3Place potatoes in bowl and mash well.

4Add egg, butter, flour and herbs. Mix well.

5Add a few drops of milk if mixture is too stiff.

6Shape dough into 1-inch thick round and slice into 8 pieces.

7Dip in seasoned flour.

8Fry on lightly greased griddle until crusty and golden on one side, 4 to 5 minutes.

9Turn over and cook on other side.

10Serve hot, each wedge topped with pat of butter, if desired.
