  • 3/4 lb. pigs liver
  • 3/4 lb. streaky bacon
  • 1 large onion, finely chopped
  • 1/2 lb. stale bread (crumbs)
  • fresh sage (chopped) or dried sage
  • 1 level tsp. dried mixed herbs
  • 2 eggs, beaten
  • 1.2 lb. oatmeal
  • milk
  • salt and pepper
  • 1 oz. flour

    1. Wash and mince the meat.

    You can choose how coarse to do this.

    2. Add the onion, breadcrumbs, oatmeal, herbs, and eggs. Add seasoning, but not too much salt as the bacon will have its own salt.

    3. Mix well together to give a moist mixture. shape into small balls (if necessary, add a bit of milk to give the desired consistency).

    4.Place the faggots into a well greased ovenproof dish and cover with foil. Cook in a moderate oven (350F) for 40 minutes. Remove the foil and cook for another 10 minutes to brown the faggots.

    5. Mix the flour with a little cold water and make a gravy with the juices.

    6.The traditional serving for faggots is hot with peas, but they go well with other vegetables and french fries.
