Fajita Pitas

Ingredients

  • 4 whole wheat pita bread rounds
  • 1 (16-ounce) can refried beans
  • 4 skinned and boned chicken breast halves, cut into strips
  • 1 tablespoon fajita seasoning
  • 3 tablespoons vegetable oil
  • 1 large onion, cut into strips
  • 1 large red bell pepper, cut into strips
  • 1 (8-ounce) container sour cream
  • 1 cup (4 ounces) shredded Cheddar
  • 1 tomato, diced
  • 2 cups shredded lettuce

Directions

    Cut bread rounds in half; spread 1/4 cup beans in each half. Wrap in aluminum foil.

    Bake at 350° for 10 minutes.

    Toss chicken with fajita seasoning. Saute in hot oil in a skillet over medium-high heat 5 minutes. Add onion and bell pepper; saute 3 minutes or until chicken is done. Spoon into pitas. Top evenly with remaining ingredients.
