Ingredients

  • 3 lb. round steak or chicken or combination of both
  • 1 green pepper
  • 1 red pepper
  • 1 onion
  • 2 tsp. ground coriander
  • 1/2 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • 4 Tbsp. lemon juice
  • 2 Tbsp. vinegar
  • 1/2 c. olive oil
  • 2 cloves garlic, crushed
  • 2 bay leaves
  • salt and pepper to taste

Directions

    Cut meat, onion and peppers into thin strips.

    Combine remaining ingredients and add meat, onion and peppers.

    Marinate in refrigerator for 24 hours.

    Take meat strips out of marinade with tongs.

    Grill or broil meat slowly.

    Drain marinade and saute peppers and onion in 1 ounce olive oil until crisp-tender.

    Serve with 10-inch flour tortillas, sour cream, shredded cheese and picante sauce.
