  • 3 lb. skirt or flank steak
  • 1/2 c. lime juice
  • 1/3 c. salad or olive oil
  • 1/3 c. tequila or lime juice
  • 4 cloves garlic, pressed
  • 1 1/2 tsp. ground cumin
  • 1 tsp. dry oregano leaves
  • 1/2 tsp. pepper
  • 4 to 5 small unpeeled onions, cut in half lengthwise
  • 8 to 10 green onions, trimmed and washed
  • 16 to 20 flour tortillas
  • Salsa Fresca
  • guacamole
  • sour cream
  • frijoles (whole, cooked pinto beans)

    Marinate steak in the next 7 ingredients for 4 hours or overnight.

    Tie green onions together and use as a brush.

    Place meat on grill.

    Baste using the onion brush.

    Cook onions 6 to 8 minutes.

    Cook the meat 3 to 5 minutes on each side.

    Roll onion brush in marinade; grill 3 to 5 minutes.

    Cut beef in strips across the grain.

    Serve in tortillas with beans, salsa, guacamole, sour cream and cilantro.
