  • 3/4 cup chickpeas
  • 1 garlic clove peeled
  • 5 sprigs fresh parsley
  • 2 sprigs fresh coriander
  • 1 lime
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoons sweet paprika
  • 1 teaspoon rosemary ground
  • 1 tablespoon flour
  • 1 teaspoon yeast

  • olive oil
  • 5/8 cup plain yogurt
  • 1/2 lime
  • 2 tablespoons vinegar
  • 2 tablespoons mayonnaise
  • 1 tablespoon sesame seeds

Directions

    Soak the chickpeas overnight in plenty of water.

    The following day, chop the garlic, parsley, and coriander.

    Drain the chickpeas and place in the food processor. Add the garlic, parsley, coriander, lime juice, 1 teaspoon water, cumin, sweet paprika, rosemary, paprika, flour, yeast, and a pinch of salt and black pepper.

    Heat plenty of olive oil in a saucepan.

    Shape the chickpea dough into plum-sized spheres. Once the oil is hot, add the spheres and fry for 5 minutes or until golden brown all over.

    Place the falafel on paper towels to absorb the excess oil.

    Mix the yogurt, lime juice, vinegar, mayonnaise, parsley, and sesame seeds. Season with a pinch of salt and black pepper.
