  • 1 lb. grass fed beef
  • 1 package wonton wrappers
  • 1/2 tsp. oil
  • 1 tbsp. butter, unsalted
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 1/2 cups Mexican blend cheese, shredded
  • 8 tbsp. chili powder
  • 2 tsp. red pepper flakes
  • 1/2 cup sour cream
  • 1 bunch chives
  • Salt and pepper to taste
  • SWEET POTATO PUREE
  • 3 sweet potatoes, peeled and diced
  • 1 tbsp. butter, unsalted
  • 6 tbsp. ground nutmeg
  • 8 tbsp. ground cinnamon
  • 1/2 to 1 cup heavy cream
