Ingredients
- leftover roast beef and bones
- 2 qt. cold water
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1/2 c. barley
- 2 medium turnips, chopped
- 4 medium carrots, chopped
- 2 c. tomato juice or puree
Directions

1In a large pot, cover beef and bones with water.

2Let stand 1 hour.

3Add onion and celery.

4Simmer, covered, for 2 hours. Remove beef and bones.

5Discard bones.

6Set aside beef.

7Strain broth into bowl and chill to congeal fat.

8Lift off fat and discard.

9Return broth to pot.

10Cut beef into bite size pieces and add to pot.

11Add barley and simmer for 1 hour.

12Add remainder of ingredients except salt and pepper.

13Simmer for 20 minutes or until veggies are tender.

14Add salt and pepper.
-
15Serve.
