  • 2 whole Purple Potatoes, Diced
  • 2 whole Yukon Gold Potatoes, Diced
  • 2 whole Red Skin Potatoes, Diced
  • 1 whole Sweet Potato, Peeled
  • 8 ounces, fluid Fresh Green Beans, Trimmed
  • 1/2 whole Red Onion, Minced
  • 1/4 whole Red Bell Pepper, Diced
  • 1/4 whole Yellow Bell Pepper, Diced
  • 1/2 cups Sour Cream
  • 1/2 cups Mayonnaise
  • 1/4 cups Dijon Mustard
  • 1 teaspoon Tarragon
  • 1/2 teaspoons Cayenne Pepper
  • 1 Tablespoon White Vinegar
  • 1 teaspoon Sugar
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1/2 cups Bacon Bits

Directions

    1. Boil potatoes until fork tender. Rinse in cold water until cool.

    2. Blanch green beans for 7 minutes. Drop into ice water to stop the cooking.
