- 6 slices bacon, cut into 2-inch pieces
- 1 small green pepper, cut into 1-inch strips
- 2 Tbsp. finely chopped onion
- 3 large potatoes, cooked, peeled and cubed
- 1/2 c. shredded sharp Cheddar cheese
- 6 eggs
- salt and pepper
Directions

1Fry bacon in a medium skillet over low heat until crisp; remove bacon, reserving 3 tablespoons drippings in skillet.

2Set bacon aside to drain.

3Add green pepper, onion and potatoes to skillet; cook over medium heat for about 5 minutes or until the potatoes are browned.

4Sprinkle cheese over potatoes and stir until cheese melts.

5Break eggs into skillet; cook over low heat, stirring gently, until done.

6Season to taste with salt and pepper.
