- 4 large potatoes
- 5 slices bacon, diced
- 2 Tbsp. oil
- 1 medium onion, diced
- 1 c. frozen peas
- 4 eggs
- 4 Tbsp. milk
- salt and pepper
Directions

1Dice potatoes and fry in oil until crispy and done.

2Drain and set aside.

3Place bacon in pan and fry until crisp.

4Add diced onion; saute for 5 minutes and drain.

5Add potatoes and peas.

6Beat eggs with milk and pour over potato mixture.

7Cook until eggs are set.

8Season with salt and pepper.
